It was good


Katie had never had dessert before her birthday. She thoroughly enjoyed her cake. In my defense, it was made with freshly ground soft white wheat, organic butter, organic carrots, and sucanat. It did have a cream cheese frosting made with organic powdered sugar--and only half what the recipe called for! :o)

It did have cream cheese frosting. :) I made it with organic powdered sugar, and just used 2 cups instead of 4. It was plenty sweet!

Yum! I love a good carrot cake! My first baby never had dessert until her first birthday. After that? Too hard to manage. ;) And I relaxed a bit... the occasional bite of ice cream or M&M made it into my babies' mouths. My SIL and I still laugh about that. "It's good to be the younger sibling!" :)
